Our smelt is caught just as nature awakens, when flavors are at their most vibrant.<\/p>\n\n\n\n<p>Lightly pan-fried, the fish retains its delicate texture, balanced by the subtle acidity of marinated fennel, the depth of charred tomato, and the fresh elegance of asparagus.
